Our Journey

It all started in 2019 when Carlos decided to bring a taste of their hometown in Mexico to the streets of Hamilton. With nothing but a second-hand food truck, a handful of family recipes, and a dream, Tacos Carlito’s Way was born.

The name “Carlito’s Way” comes from Carlos’s childhood nickname, given by his abuela who taught him the art of making the perfect tortilla. Those same techniques—pressing each tortilla by hand, slow-braising meats for hours, and blending salsas fresh every morning—are what make our tacos special today.

What began as a small operation serving tacos at local farmers markets has grown into a beloved Hamilton institution. We’ve served thousands of tacos at festivals, weddings, corporate events, and our seasonal home base at Wild Waterworks.

But no matter how much we grow, our commitment to quality and community remains the same. Every taco we serve is made with the same love and care that Abuela Carlita put into her cooking back in Mexico.
